Babor-E-Handi
Ingredients:
Chicken pieces – medium size
Curd
Sweet curd
Coriander powder
Salt
Sugar
Red chilli
Black pepper
Mace
Clove
Cardamom
Cinnamon
Ghee
White oil
Onion paste
Ginger paste
Garlic paste

Preparation:

Marinate the chicken with two types of curd, coriander powder and onion-ginger-garlic paste for 2hours. Heat ghee and white oil in a pan and add a little sugar. Add cloves, cardamom, cinnamon, mace and black pepper. Now add the marinated chicken and mix it well. Add salt and red chilli and mix well. Now add a little water and cover it with a lid till the chicken is soft. Now open the lid and when it becomes dry pour into a bowl. Serve with paratha, naan or pulao.

Pasta with Mustard White Sauce





Pasta with Mustard white sauce is a sure winner if you want to avoid a boring dinner at home. Prepare this yummy dish and avoid seeing somber faces of your near and dear ones.

Ingredients:
Pasta
Chopped capsicum
Chopped carrot
Chopped tomato
Sweet corn
Chopped onion
Chopped garlic
Corn flour
Milk
Pepper powder
Salt
Mustard powder
Kasundi (Indian mustard sauce)
Dry oregano
Dry parsley
Butter
White oil

Preparation:

White sauce: Heat butter in a pan and add chopped garlic. When it turns golden add cornflour and milk and keep stirring well so that no lump is formed. When it becomes thick, add pepper powder and mustard powder and mix it well. White sauce is now ready.

Pasta: At first boil pasta with few drops of oil, water and a pinch of salt. When the pasta becomes soft strain water and keep aside. Now put oil in a frying pan, add chopped onion and garlic and sauté it. Add chopped capsicum, carrot and corn and stir well in high flame. After 1-2 minutes add boiled pasta and chopped tomato and mix well. Add salt, pepper powder, white sauce and kasundi and stir well. Serve hot pasta in a plate and spread some dry herbs on it.

Ingredients:
Chicken medium pieces
Garlic paste
Ginger paste.
Salt
Black pepper powder
White pepper powder
Crushed black pepper
Coriander leaves
White oil

Preparation:
Marinate the chicken for an hour with ginger-garlic paste and two types of pepper. Heat oil in a pan and put the marinated chicken. Fry it about for around 5 minutes. Then add salt and water and cover the pan with lid till the chicken is cooked. Now remove the lid and pour into a bowl. Spread crushed black pepper and coriander leaves over the chicken.

Banana with Sticky Toffee Sauce



Ingredients:

Banana slice
Butter
Orange juice
Sugar
Honey
Vanilla essence
Chopped almond
Vanilla ice cream

Preparation:

Heat butter in a pan and put sliced banana. Lightly fry both sides of banana. 
In a bowl, mix orange juice, honey, sugar and vanilla essence and pour over the banana. Stir it well. 
After a minute remove only the fried banana from pan and keep on a serving plate. 
When the sauce becomes thick, remove it from heat and pour over the fried banana.
Spread some vanilla ice cream over this.
Garnish this with  some chopped almond, pistachino and cherry.
Your home made Banana with Sticky Toffee Sauce is now ready.

Ingredients:

Chicken boneless pieces
Cauliflower pieces
Half sliced carrot
Chopped beans
Julienne cut green capsicum
Chopped cabbage
Chopped  spring onion
Half sliced zucchini
Chopped onion
Chopped garlic
Chopped ginger
Roasted sesame
Salt
Pepper powder
Soy sauce
Cornflour
White oil

Preparation:

Heat oil in a pan and put chopped onion, ginger and garlic. Now sauté it and add chicken. Fry chicken and add all vegetables, pepper powder and salt. Stir well on high flame. Add a little soy sauce and roasted sesame. Stir well till the chicken is cooked. Pour into a bowl and spread roasted sesame over the chicken. Serve hot.

Stir Fried Zucchini Chicken With Herbs

Ingredients:
Chicken small pieces
 Zucchini halfed and sliced
Square cut capsicum
Julienne cut tomato
Sweet corn
Ginger-garlic-onion paste
Chopped onion
Chopped garlic
Chopped ginger
Salt
Oregano
Dry celery
 Dry parsley
Lemon juice
Red chilli powder
White oil

Preparation:

Boil chicken with a little ginger-garlic-onion paste, pepper powder and separate the chicken and stock.

In a fry pan put oil and add chopped garlic, ginger and onion.

Now sauté it and add oregano, zucchini, capsicum, sweet corn and chicken pieces.

After 1-2 minute add salt, pepper powder, red chilli powder and mix well.

Add chicken stock and cook for 2 minute.

Now add dry celery-parsley and mix it.

Serve in a plate and spread a few drops of lemon juice.

Honey Glazed Chicken Drumstick


Honey glazed chicken drumstick
Ingredients:
Chicken drumstick
Soya sauce
Spring onion
Zucchini juliene cut
Honey
Chopped garlic
Salt
White pepper powder
Black pepper powder
Corn flour
Chilli flakes
 Roasted sesame
White oil
Ajinamoto

Preperation:
At first boil the chicken drumstick and separate the chicken pieces and stock.
Then marinate the boiled chicken with salt and pepper powder.
In a flat pan put oil and shallow fry the boiled drumstick. When it becomes light brown remove it from the pan.
In another pan put little oil and add chopped garlic.
Now saute it and add zucchini, spring onion, chilli flakes, pepper powder, salt, saya sauce and mix all in high flame.
Add fried chicken pieces.
In a bowl mix cornflour, ajinamoto and chicken stock and add in the pan.
Now add honey and stir well.
Serve hot in a plate and spread roasted sesame on it.

Chicken Chaap
Chicken chaap













Chicken Chaap or Chanp is a Bengali delicacy with Mughlai influence. There is always a debate on whether to have Chaap with Biriyani, Rumali roti or Naan. Me and my family love to have this popular Bengali dish with Paarantha or Naan.

Ingredients required for Chicken Chaap:

Chicken – 4 large pieces
Garlic paste – 1tsp
Ginger paste – 1tsp
Red chilli powder – 1tsp
Garam masala powder – 1/4tsp
Keora water – 1/2tsp
Green papaya paste – 4tbsp
Salt
Ghee-4tbsp

How to cook Chicken Chaap (chanp): 
Marinate the chicken with ginger-garlic paste, red chilli powder, salt, garam masala powder and keora water for 30 minutes. Heat ghee in a pan and put the marinated chicken. Stir it well. After 2-3 minutes add papaya paste and mix well. When the chicken becomes soft and oil is separated from it serve hot with parantha or naan. If you feel it necessary, you can add little bit of water.
NB: Papaya juice can be used instead of paste.

Ingredients:
 Cooked basmati rice
Lemon juice
Curry leaves
Salt
Mustard seeds
Red chilli
Chopped green chillies
Turmeric powder
White oil

Preparation:
Heat oil in a pan and put red chilli, mustard seeds, curry leaves and chopped green chillies.
Fry till the spluttering stops and remove the red chilli from the pan and keep aside.
Add turmeric powder and remove it from oven.
Add cooked rice, salt, lemon juice and mix well lightly.
Serve in a plate and garnish with fried red chilli.

Chicken Rezala

Chicken Rezala

Chicken Rezala is a Mughlai dish but it is very popular in Kolkata and other parts of West Bengal. 

Chicken Rezala - Ingredients:

Chicken large pieces - 500gms
Curd - 150 gms
Onion -2 large
Garlic paste -1tsp
Ginger -1”
Green chilli  - 3
1/2tsp garam-masala powder
1tsp sugar
2 black cardamom
2 red chilli
Salt
1cup water
Ghee-2tbsp

Chicken Rezala - Preparation:

Blend ginger, garlic, onion and green chillies together. Boil the chicken with blended spices, salt and water. Do not drain water from chicken. Take curd, sugar and garam masala powder in a bowl and beat well. When the boiled chicken cools down add beaten curd in it. Then keep the chicken in a serving bowl. In a pan heat ghee and add red chillis and black cardamoms. When it starts spluttering pour it over chicken and serve with Nun, Parantha or Tandoori roti.

Chicken Roast With Pepper
Ingredients:
Chicken Roast With Pepper
Chicken drumstick
Lemon juice
Fine sliced onion
Ginger paste
Garlic paste
Salt
Pepper powder
White oil

Preperation:
Marinate the chicken with lemon juice, ginger-garlic paste and salt for 45 minutes. In a karai heat oil and fry the sliced onion till it is brown. Now heat oil in a pressure cooker and keep the marinated drumstick. Put fried onion over the chicken and spread a large amount of pepper powder. Wait for 2-3 whistle and serve hot with salad.
