easy chicken korma recipe
Chicken Korma

Ingredients:

Chicken – 750 gms
Curd – 4 tbsp
Finely sliced onion – 1 medium
Onion paste – 3 medium
Garlic  paste – 8 cloves
Ginger paste – 1 tsp
Cumin powder – 2 tsp
Coriander powder – 2 tsp
Black pepper powder – 2 tsp
Turmeric powder – 1 pinch
Kashmiri red chilli powder – 1 ½ tsp
Salt
Sugar
Garam masala powder – 1 tsp
Chopped coriander leaves – ½ cup
Ghee – 2 tsp
Rose water – few drops
White oil – 6 tbsp

Recipe:

Marinate the chicken with curd and one pinch of turmeric powder and keep aside for an hour.
Then heat oil in a pan and fry the sliced onion till golden brown. This is called beresta. Keep this aside.

Now add onion and garlic paste in the same oil and fry it till golden. Then add ginger paste and stir well. Add red chilli powder and  marinated chicken and mix well. Add sugar and stir continuously till the oil is separated from the spices. Now take a small bowl and mix cumin, coriander and black pepper powder with some water and make a paste. Then add it with the chicken. Mix it gently and add salt. Add little bit of water and cover the chicken with a lid till the chicken becomes soft. Now remove the cover and add chopped coriander leaves, garam masala powder and beresta (fried onion) and mix it. Now turn off the gas and put 2 tbsp ghee and few drops of rose water and cover it for 5 minutes. 

Serve hot chicken korma with paratha, naan, pulao etc whatever you feel like.

Easy pan fried tandoori pomfret recipe
Tandoori Pomfret

Ingredients:

Pomfret – 2 pcs
Tandoori masala – 1 tbsp
Lemon juice – few drops
Salt
Red chilli powder – 1 tsp
Hung curd – 1 tbsp
Ginger garlic paste – 1 tsp
White oil

Method:


Marinate pomfrets with a few drops of lemon juice and salt and keep aside for 10 minutes. Then add all ingredients except oil in the marinated fish and again marinate it for 2 hrs. 

Now grease a flat pan and put the marinated fish. Keep it for 5 minutes. When one side is done, turn over the fish and cook for another 2-3 minutes. 

Your pan fried tandoori pomfret is now ready. Serve hot with salad.

Rasgulla or rosogolla is the most famous sweet from West Bengal. Kamala bhog is orange flavoured rasgulla.

Kamala Bhog - Orange Flavored Rasgulla

Ingredients:

Milk – 1 lt
Sugar – 1 cup
Water – 4 cups
Orange juice – 1 medium orange
Lemon juice – 1 medium lemon
Orange colour – 1 pinch (optional)
Orange flavour– few drops

Recipe:

In a vessel heat milk and then add orange and lemon juice. As a result the milk will break and turn into chenna (soft paneer, a variety of Indian cottage cheese) and will look like spongy lumps. Then strain water and hang in a maslin cloth for 30—45 minutes. Now take a plate and smash the chenna with a pinch of orange food colour (optional) and few drops of orange flavour and make a smooth paste. You can do it in mixer. Now make around 15 balls  from the chenna paste.  

Take a large vessel and add the sugar and water and turn on the gas to make syrup. When the sugar starts melting, put the chenna balls into the syrup. Boil the balls for 25 – 30 minutes.

Now your kamala bhog is ready. Keep them in the same vessel for 15 – 20 minutes without touching.

Bengali Style Koraishutir Kachuri (Puri stuffed with green peas)

Koraishutir kachuri or motorshutir kachuri is one of the most sought after dish for Bengalis in winter. The combination of koraishutir kochuri and aloor dum is simply irresistible. Koraishutir kochuri is basically puri stuffed with fresh green peas paste and aloor dum is a special Bengali side dish prepared from potatoes.

Ingredients:

Regular flour 3 cup
Salt
White oil
Green peas 1 cup
Salt
Sugar 1 pinch
Dry roast spices (cumin, dry red chilli, cardamom, cinnamon, and clove)

Koraishutir Kachuri

Recipe:

At first boil green peas and make a paste in the mixer. Dry roast cumin seeds, red chili and cardamom, clove, cinnamon and grind it in the mixer to make a spice powder and keep aside with a lid. Now heat 1 tbsp oil or ghee in a pan and put the green peas paste. Keep stirring and add salt and a pinch of sugar. After a while, spread the freshly prepared spice powder.

Now take a large bowl and take flour, 5-6 tbsp oil, a pinch of salt and mix it gently. Now add sufficient water to make dough. Make small balls from the dough, make it shape like a small bowl, put a small portion of green peas paste and fold it. Take it in one palm and place the other palm on top and rotate it. This will now look like balls stuffed with green peas paste. Now roll the balls into circles. Do not try to make this too thin as the stuffing will come out then.

Now heat sufficient oil in a deep pan or kadai and fry the kachuris one by one till they puff up and you see light golden colour.

Serve hot kachuri with aloor dum.  I would recommend keep the last one or two pieces of kachuri to be eaten with semiya kheer. This should complete a sumptuous dinner.

healthy udon strap noodles salad recipe
Udon Noodles Salad

Udon is a type of strap noodles made from wheat flour.

Ingredients:

Udon 200gms
Carrot – 1 medium size
Cucumber – 1 medium size
Zucchini – 1 medium size
Yellow bell pepper
Spring onion
For dressing:
White oil – 1 tbsp.
Oyster sauce – 1 tsp
Soya sauce – 2 tsp
Vinegar – 1 tbsp.

Recipe:

At first, boil udon with little bit of oil. Now cut carrot, cucumber, zucchini, spring onion and yellow bell pepper into julienne cut. If you can cut full carrot and cucumber in julienne that will be even better as it will look good with strap noodles. Now mix the boiled noodles with coriander leaves with little bit of salt.
Now take a bowl and mix all the dressing ingredients and mix with noodles. Your oriental udon noodle salad is now ready to serve.

If you wish, you can add oyster mushrooms and it will make it more healthy and scrumptious.

Oats Apple Muffins

Ingredients:

Regular flour – ½ cup
Oats – ½ cup
Chopped apple – 1 cup
Baking powder – 1 tsp
Egg – 2 pcs
Butter – ½ cup
Sugar – ½ cup
Vanilla essence
Cinnamon powder – 1 tsp

Recipe:

At first, grind the oats to make oats flour.
Now take a mixing bowl and sieve the oats and regular flour, baking powder and cinnamon powder and keep aside.
Then take a mixing bowl and beat the sugar and butter. After 2-3 minutes add two eggs and whisk it. When you feel that it has become flappy, add vanilla essence and two types of flour, baking powder and cinnamon powder. Mix it properly. This is the most important step of making cake.
Now take the chopped apples and toss it with 1 tsp regular flour. then mix it with the batter.
Now take muffins mold and pour the cake batter and place it in the preheated oven in 180c for 20 minutes.

When time is over, take a muffin and gently prick it from top with a toothpick. If the toothpick comes out clean this indicates that your muffins are ready.

Easy Thai chicken recipe with basil
Thai Chicken With Basil

Ingredients:

Boneless chicken – 300 gms
Fresh basil leaves 1 – cup (or Thai holy basil paste)
Chopped onion – 2 tbsp
Chopped garlic – 1 tsp
Fish sauce – 2 tbsp
Vinegar – 1 tsp
Oyster sauce – 1 tbsp
Sugar – 1 tsp
Salt
Chopped red chilli
Fresh lemon leaves (chopped)
White oil

Thai Chicken With Basil

Recipe:

At first we need a basil based spice mix. I prepared this dish with Thai holy basil paste. If you do not have the paste, take half of the basil leaves, chopped garlic and chillies in a blender and blend it very well.
Now take a bowl and put the basil mix or Thai holy basil paste and add 1 tbsp fish sauce, oyster sauce, vinegar and sugar. Mix it and keep aside with a lid.
Then mix the chicken with 1tbsp fish sauce and put it in a blender and blend it for 5 seconds or less, because we do not need smashed chicken, we just need small pieces of  chicken. Refrigerate it for 15 minutes.
Now heat oil in a pan and put the chopped onion, garlic and half of basil mix and fry till golden. Then add the chicken and cook it. When it changes its colour, add remaining basil mix and stir well. When you see the chicken is fully cooked, add chopped fresh lemon leaves and mix it.
Serve hot with steamed rice.

Simple Vanilla Cake

Ingredients:

Flour – 1 cup
Baking powder 1 – tsp
Butter – 50 gms
Egg – 2
Sugar – ½ cup
Vanilla essence

Recipe:

At first grind the sugar and keep aside.
Now take a mixing bowl and put butter and sugar powder and beat well. Then add an egg and beat it well and add few drops of vanilla essence.
Now take a mixing bowl and mix 1 cup of regular flour and 1 – tsp baking powder.
Add this flour into beaten egg and mix well. If you feel the batter is thick you can add lukewarm milk. Actually this batter should be ribboning.
Now pre heat the oven in convection mode 180c for 2 – 3 minutes.
Now grease the baking tin and pour the batter and place it into oven in 180c for 25 minutes.

Take the cake tin and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that your cake is ready.

grilled chicken with orange juice and herbs
Caribbean Grilled Chicken

Ingredients:

Chicken breast – 2 pieces
Red chilli 3 – 4 pcs
Chopped onion – 1 tbsp
Sugar – 1 tbsp
Garlic 6-7 cloves
Green cardamom – 2 pcs
Cinnamon – 1 inch
Cloves 4 – 5 pcs
Nutmeg powder – ¼ tsp
Soya sauce – 1 ½ tbsp
Thyme or any other herbs (optional)
Pepper powder
Orange juice – ½ cup
Lemon juice – 1 tbsp
Salt
White oil

Recipe:

Take a mixing blender and blend the all ingredients except chicken, salt and oil to make paste.
Then take a knife or fork to pick the chicken because the spices enter into the chicken and it will be tastier.
Now marinate the chicken with that paste and salt and few drops of oil and keep aside for half an hour.
After 30 minutes take a grill rack and place the marinated chicken. Then shift it into oven and grill it for 5 minutes for each side.
Serve hot.
Chicken breast pieces do not take much time to cook and if it is overcooked it will be hard. So be careful while grilling the chicken breast pieces.


Easy Christmas palm cake recipe
Christmas Palm Cake

Ingredients:

Regular flour – 1 cup
Egg – 2
Butter – 50 gms
Baking powder – 1 tsp
Sugar – ½ cup
Vanilla essence 2–3 drops
Rum – ½ cup
Cinnamon powder ¼ tsp
Nutmeg powder ¼ tsp
Chopped dry fruits and jelly belly
Grated orange zest ½ tsp

Easy Palm Cake Recipe

Recipe:

Soak the chopped dry fruits like dark and light raisons, nuts and jelly belly and grated orange zest.
 Now grind the sugar and keep aside.
Take a mixing bowl and mix 1 cup of regular flour and 1tsp baking powder. Sieve it well and add cinnamon powder and nutmeg powder.
Now take another mixing bowl and put butter and powder sugar and beat well. Then add eggs and beat well. When it starts looking floppy add vanilla essence, flour, soaked dry fruits and orange zest and mix well with a spatula. This mixing is most important step to make a good cake. It is called fold and the movement should be on the same side (clockwise or anticlockwise).
 Now grease the baking tin and pour the batter and place it into preheated oven in convection mode at 180c for 25-30 minutes.

After hearing beep sound. take a toothpick and gently prick the cake from top. If the toothpick comes out clean this indicates that your palm cake is ready.

Omlette Muffins with vegetables for breakfast
Omlette Muffins

Ingredients

Egg – 3
Chopped tomato – 1 large
Chopped onion – 1 medium
Pepper powder
Chopped green chilli (optional)
Any dry herbs
Al seasoning spices – 1 tsp
Salt
Grated cheese – 1 cube
Baking powder – 1 pinch
White oil for greasing

Recipe:

Take a mixing bowl and mix the chopped tomato – onion – green chilli, grated cheese, salt, all seasoning spices, dry herbs, pepper powder. Now take six muffins molds and grease it. Put some of this mixture into all the molds and keep aside.  Now, beat the eggs with a pinch of baking powder and salt. Put the beaten egg on the mixture and place it into the preheated oven. Set the convection mode in full power for 10 minutes.  After 10 minutes take one of them out from the oven and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that the muffins are ready.
Serve hot with tomato ketchup or any other sauce which you like.

Ingredients:

Finely chopped cabbage – 1 ½ cup
Finely chopped carrots – 1 cup
Finely chopped bins – 2/3 cup
Finely sliced onion – 1 medium
Grated cheese – 1 cube
Chopped green chilli (optional)
Grated ginger – 1 tsp
Chopped coriander leaves – ½ cup
Salt
Sugar – 1 pinch
Lemon juice – 1 tbsp.
Cumin powder – ½ tsp
Coriander powder – 1 tsp
Black pepper powder
Corn flour – 2 tbsp.
Besan or gram flour
Chat masala or black salt
White oil

Recipe:

Take a large bowl and mix all the ingredients except oil, gram flour and cornflour. Then add two types flour and mix it. Actually gramflour has been used here for binding. Now make some balls from the dough. If you want to give any other shape you can give it. Do not add chopped chilli if you are preparing for kids.
Now take a wok or deep pan and heat oil for frying. Then put the balls into the oil and fry it till golden.

 Now sprinkle some chat masala or black salt which you like and serve hot with tomato ketchup.

easy Banana Loaf recipe in microwave
Banana Loaf

Ingredients:

All-purpose flour – 1 cup
Ripe banana – 2
Egg – 2
Butter – ½ cup
Sugar – ½ cup
Baking powder – 1tsp
Vanilla essence

Recipe:

At first grind the sugar and keep aside.
Smash the bananas to make a smooth paste and keep aside. It is better to use a blender
Now take a mixing bowl and put butter and sugar powder and beat well. Then add eggs and beat well and add few drops of vanilla essence.
Take a mixing bowl and mix 1 cup of regular flour and baking powder.
Now, slowly add this flour into beaten eggs and mix well. And at last add the smashed banana and mix well. If you feel the batter is thick you can add lukewarm milk. Actually this batter should be ribboning.
Now pre heat the oven in 180c for 2 minutes.
Grease the baking tin and pour batter and place it into oven in 180c for 20 minutes.
Take out the cake tin and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that your banana loaf is ready.

jack fruit kabab recipe
Jackfriut (Echor) Shammi Kabab


Ingredients:

Raw jackfruit (echor)
Cumin
Coriander
Cinnamon
Clove
Green
Cardamom
Pepper corn
Kabab chini
Dry red chilli
Kasuri methi
Ginger-garlic paste
Turmeric powder
Salt
Sugar
Lemon juice
Roughly chopped onion
Chopped coriander leaves
Gram flour

Recipe:

At first boil jackfruit and smash it to make a paste. Dry roast some spices such as cumin, coriander, cinnamon, clove, green cardamom, pepper corn, kabab chini, dry red chilli, kasuri methi and grind it. Keep aside with a lid. Now take a mixing bowl and keep the smashed raw jackfruit, chopped onion, ginger-garlic paste, a pinch of turmeric powder, salt, pinch of sugar, roasted spices, lemon juice, chopped coriander leaves and gram flour for binding and make a dough. Now make small balls from the dough. After that, take a ball in your palm and give light pressure by other palm to make it look like tikki. Now heat ghee in a flat pan and fry the kababs for 2-3 minutes.
Serve in a plate and sprinkle some chat masala.

Chicken mince (keema) – 200gms
Chopped onion – 1tbsp
Ginger paste – ½tsp
Garlic paste – ½tsp
Chopped tomato without skin – 1medium size
Coriander powder – 1tsp
Cumin powder – 1tsp
Chopped green chilli – 1tbsp
Chopped coriander leaves – 2tbsp
Garam masala powder – ½tsp
Dry roasted crushed chana – 2 hands full
Gram flour –  4tbsp
Salt
Chat masala
Ghee 2 tbsp

Recipe:

At first boil chicken, chopped onion, ginger–garlic paste and salt. When it comes to room temperature, add all spices, green chilli, chopped tomato, chopped coriander leaves and gram flour.  Flour is used for binding. Now mix it and divide it to make 8 balls. After that, take a ball in your palm and give light pressure by other palm to make it look like tikki. Now take a flat dish and spread roasted chana. Coat the kababs lightly with chana. Now heat ghee in a flat pan and fry the kababs for 2-3 minutes.

Serve in a plate and sprinkle some chat masala.

walnut brownie with vanilla icecream and chocolate sauce
Walnut Brownie
Brownie with vanilla ice cream is one of classic dessert combination liked by almost everybody. I tried my hand in preparing walnut brownie at home. 

Ingredients:

Regular flour – 100gms
Castor sugar – 150 gms
Baking powder – 1tsp
Butter – 100gms
Coco powder – 4tbsp
Vanilla essence – 1tsp
Egg – 2
Chopped walnut – 50gms

Recipe:

At first take a mixing bowl and mix coco powder, flour, powdered brown sugar and baking powder. Now add butter, egg, vanilla essence and beat well. This is the main thing of this brownie. Now take a baking dish and grease it with some butter or vegetable oil and pour the batter. Then spread some chopped walnut and press it with a spoon. Now shift it into oven at micro full power (100%) for 6 minutes.

Serve hot brownie with vanilla ice cream and spread some chocolate sauce.
