Sandesh is one of the most popular Bengali dessert. I prepared this variety of  sandesh with green peas and kalakand.

Double Decker Sandesh

Ingredients:

Green peas 200 gms
Kalakand 200 gms
Milk powder 3 tbsp
Sugar ½ cup
Green cardamom powder 1 pinch
Silver foil
Crushed cashew nuts

Recipe:

Boil the peas and make a paste.
Now take a pan in low flame and put peas paste. Stir it and add milk powder and sugar and mix it very gently in low flame. When the peas paste comes out from the pan, add green cardamom powder and mix gently. Now remove it from heat and keeps it aside.
Now take a flat plate and put the kalakand. Spread it to make a layer. Now put the peas paste above it and make a flat surface with a spatula. Now we get two layers and cut it with a sharp knife. Garnish with silver foil and cashew nuts.

easy kesar sandesh recipe
Kesar Sandesh

Ingredients:

Milk - 1 ltr
Sugar – 2/3 cup
Saffron (kesar) - 1 pinch
Milk - 2tsp
Chopped pistachio

Recipe:

Take a pan and dry roast the saffron. Now take a small bowl and soak the saffron into 2 tsp milk. 

Heat milk in a vessel and then add a few drops of lemon juice. As a result the milk will break and turn into chenna (paneer) and will look like spongy lumps. Then strain water and keep chenna in a bowl. Now add sugar and mix it very well to make a smooth creamy texture. Now put it in a non -stick pan and stir in low flame for 5 minutes. When the dough is separated from the pan remove it from flame. Now keep it in a plate and add the soaked saffron. Mix it very well. The dough should be used immediately to make various shapes of sandesh. Use chopped pistachio to garnish.

cauliflower prepared in coconut milk
Gobi Malai


Ingredients:

Cauliflower medium size
Coconut milk 1 cup
Ginger paste 1 tsp
Red chilli powder 1tsp
Salt
Sugar
Clove 3-4 pieces
Green cardamom 3-4 pcs
Cinnamon 1 inch
Chopped green chilli
White oil

Recipe:

Cut cauliflower into florets and boil it for 5-6 minutes. Strain the water and keep aside.
Now heat 2 tbsp oil in a pan and fry the boiled cauliflower. When it turns golden, remove from heat and keep aside.

Then put all whole spices. After ½ minute add ginger paste. Fry it for 1 minutes and add red chilli powder, salt and sugar and mix it. If you see it is burning, add little bit of water. Now add fried cauliflower and add some water. After 3-4 minutes, add chopped green chilli and coconut milk. After 1 minute remove from heat and serve with pulao, naan or paratha.

Aloorr dum is one of the most popular side dish for Bengalis complementing Luchi (puri). This alur dom is prepared with baby potato and complement motorshutir kochuri (puri stuffed with green peas). This tastes best in winter s you get fresh new potatoes and green peas.

Aloor Dum

Ingredients:

Baby potatoes – 300 gm
Ginger paste – 2 tsp
Chopped tomato – 2 small
Green peas – ½ cup
Turmeric powder
Kashmiri red chilli powder
Green chilli paste
Chopped coriander leaves – 1 cup
Cumin seeds
Mustard oil
Salt
Sugar

Recipe:

Boil the potatoes with skin with a pinch of salt. When it cools down to room temperature peel the skin. Salt helps to remove the skin easily.
Heat oil in a pan and put cumin seeds. Add chopped tomatoes. When the tomato is half cooked add ginger paste and green chili paste. Add the green peas and stir well. Add turmeric powder, chilli powder, a pinch of sugar and salt and mix well. Now add the boiled and potatoes. Add 3/4th cup of chopped coriander leaves. Add a little bit of water. After a few minutes when the water dries up remove from flame.

Serve with Luchi or Motor shutir kochuri.

Egg devil or dimer chop is one of the most famous street foods of Kolkata. This mouthwatering Bengali snacks was also very popular in various occasions in our childhood days.

Ingredients:

Boiled egg
Boiled and smashed potato
Chopped onion
Ginger paste
Chopped coriander leaves
Turmeric powder
Red chilli powder
Tomato ketchup
Salt
Cumin seeds
Dry red chilli
Corn flour
Bread crumbs
White oil

Recipe:

Dry roast the cumin seeds and dry red chilli and ground it. Keep it aside with a lid.
Then heat 1tbsp oil in a pan and put chopped onion and fry it till golden. Now add ginger paste, a pinch of turmeric powder, salt and chilli powder and stir well. Then add smashed potato and chopped coriander and mix. When properly mixed add the dry roasted powder and remove from fire.

Now cut the boiled eggs in half with a sharp knife.
Then take a piece of egg and some smashed potato in your hand and stick them together in the shape of a full egg. This is an egg devil. Prepare devil with all the pieces of half egg.

Now take a bowl and mix some corn flour and water like starch. Spread some bread crumbs in a flat plate.
Then take a devil and deep into the corn flour starch and immediately roll it over the bread crumbs. 
Now heat oil in a deep pan and deep fry the devils till golden.


Serve hot with salad.

Vegetable Au Gratin

Ingredients:

2 whole boiled potatoes
Chopped carrot - hands full
 Chopped Cauliflower - hands full
 Chopped Beans - hands full
Chopped capsicum - hands full
Green peas - 1 tbsp
Tomato ketchup - 4 tbsp
Fresh cream - 1 tbsp
Salt
Flour
Milk
Mustered powder
Butter
Black pepper powder
Chopped garlic - ½ tsp
 Grated Cheese - 2 cubes
Some herbs (which you like)

Recipe:

At first blanch the all vegetables and keep aside.
White sauce: Heat butter in a pan and add chopped garlic. When it turns golden add flour and milk and keep stirring well so that no lump is formed. When it becomes thick, add pepper powder and mustard powder and mix +well. White sauce is now ready.
Now take a bowl and grate the boiled potato and smash it. Now add tomato ketchup, cream and half of the cheese and mix it very gently.
Now take the white sauce and add the blanched vegetables and mix it gently.
Then grease a baking dish and put the vegetables mixture. Make a layer of smashed potato above the vegetable mix. Spread the remaining cheese and sprinkle some herbs on top.
Now bake it at 180c for 20 minutes.
Serve hot.

This is a leftover recipe. Actually one day I had some leftover roti and I was not feeling like to eat that. So I needed a recipe for that leftover roti. For the past few days I was thinking of making a salad. So I got this idea of preparing salad with that leftover rotis.

Roti Chicken Salad

Ingredients:

Leftover roti
Boiled chicken
Carrot
Beans
Yellow capsicum
Green capsicum
Sweet corn
Cherry tomato
Mayonnaise

 Recipe:

Cut all vegetables in Julian cut except corn and tomato.
Then blanch the all vegetables and corn.
Now roll the rotis and cut it like a strap.
Take a large bowl and put all vegetables, chicken, rotis and mayonnaise.
Sprinkle some salt and black pepper and mix well. If you need more flavor, add some herbs like parsley, rosemary etc.

Ingredients:
Chicken breast pieces
Garlic paste
Salt
Lemon juice
Black pepper powder
Dry parsley leaves or any herbs you like
Butter

Recipe:
Marinate chicken with lemon juice, black pepper powder, garlic paste and salt and keep it for 15-20 minutes.  Then place the chicken in a baking dish and sprinkle some dry parsley and butter. Now bake it in 180c for 20 minutes.
