Paneer Sashlik

Paneer Sashlik is an easy to cook veg starter made of cottage cheese (paneer) and vegetables.

Paneer Sashlik
Ingredients:
Paneer cubes
Onion
Capsicum
Tomato
Salt
Lemon juice
Ginger paste
Garlic paste
Green chilli paste
Hang curd
Red chilli powder
White oil
Kabab stick (skewer)

Recipe:

Cut all vegetables in square pieces. In a bowl marinate paneer with all ingredients except vegetables and oil for 1-2 hours in freeze. Now string the paneer and vegetables in the order of onion-paneer-tomato-paneer-capsicum-paneer-onion in a skewer. Grease a fry pan and put the paneer skewer. Now shallow fry it.
In the skewer, keep onion slices at the beginning and at the end because it is stronger than other vegetables and will not brake easily.

Mutton Kasha

Mutton Kasha (aka Kosha Mangso) is a traditional Bengali dish. This mouthwatering mutton curry is a bit spicy. Authentic mutton kosha does not require water and is cooked in low flame for a long time to make the meat very soft. As people do not have much time these days, pressure cooker is used to quicken the process. Also a little bit of water can be added if you want more gravy.

Ingredients:
Mutton medium pieces
Sliced onion
Onion paste
Garlic paste
Ginger paste
Coriander powder
Turmeric powder
Red chilli powder
Salt
Sugar
Curd
Garammasala powder
Bay leaves
Mustard oil

How to cook Mutton Kasha:

Marinate the mutton with curd for 3-4 hrs. Take oil in a pan and add bay leaves, little bit sugar and a pinch of turmeric powder. Now add sliced onion and onion paste and fry till golden. Then add ginger-garlic paste and fry it. After 2 minutes add marinated mutton and mix it. Now add salt and all spices. Stir well till the oil is separated from mutton. Now shift it into a pressure cooker and cover the lid. Wait for 10-15 minutes or until the mutton softens.

Serve hot with rice, pulao, roti, paratha, puri or anything you wish.

Makai Matar Paneer

Makai matar paneeer is an Indian medium spicy side dish made of sweet corn, green peas and paneer.

Makai Matar Paneer - Ingredients:

Crushed green peas (matar)
Grated paneer (cottage cheese)
Crushed sweet corn (makai)
Curd
Coriander powder
Dry fenugreek leaves (kasuri methi)
Cumin seeds
Salt
Red chilli powder
Sugar
White oil

Makai Matar Paneer - Preparation:


Heat oil in a pan and add cumin seeds. When you start getting nice aroma, add crushed peas and stir it. In a bowl take crushed corn and curd and mix very well. Then add this mix in the pan and mix it. Now add all spices, salt and sugar. Stir it very well and add grated paneer. Mix it well and add little water and cover it. After 2 minutes, when it becomes dry take off the heat and serve hot in a plate with chapatti or parantha.

Ingredients:
Broccoli
Potato
Capsicum
Carrot
Beans
Baby corn
Noodles
Chopped onion
Chopped garlic
Regular flour
Mustard powder
Black pepper powder
Chilli flakes
 Chopped parsley
Chilli garlic sauce
Butter
Salt
White oil
Grated cheese
Preparation:
At first, boil noodles in water with few drops of oil and a pinch of salt. When the noodles become soft strain water and keep aside.
White sauce: Heat butter in a pan and add chopped garlic. When they turn golden add cornflour and milk and keep stirring well so that no lump is formed. When it becomes thick, add pepper powder and mustard powder and mix it well. White sauce is now ready.
Now, cut all vegetables into small pieces.
In a pan heat oil and add chopped onion and garlic. Sauté it and add all vegetables. Stir it well and add salt, black pepper powder and mix well in high flame. When the vegetables become soft, add white sauce and chilli flakes and mix well and keep aside.
Take another pan and heat little bit of oil. Add boiled noodles and chilli garlic sauce and salt as required. Mix it well.
Now, grease a baking dish and pour vegetables into it. Then pour noodles on top of vegetables to make two layers. Spread grated cheese and chopped parsley over it and bake for 8-10 minutes.
