Zucchini Fritters is one of my daughter’s favorite snacks. She is always ready to eat it. And I am also ready to make this because this is very healthy, tasty as well as low calorie. It is really very easy to make with very few ingredients. If u r vegetarian u can avoid the egg. If you are not calorie conscious you can make it deep fried but as per my recipe it is pan-fried because me and my family like it.

Ingredients:

Zucchini -1 large
Chopped garlic – 1tsp
Olive oil – 1 tbsp
Egg – 1
Black pepper – crushed
Corn flour _ 2 tbsp
All-purpose flour – 2 tbsp
Salt
Grated cheese – 2 tbsp
Herbs – as per your choice

Recipe:

Grate the zucchini first and keep in a large bowl with pinch of salt. Keep aside for 15/20 minutes.

Now squeeze out the water from zucchini with your palms.
In a mixing bowl put the zucchini and add an egg, salt, crushed pepper, chopped garlic, 1 tsp olive oil, any herbs and mix it.
Then add corn flour and all-purpose flour and make a dough, consistency like cookie dough.

Grease your pan with remaining oil and heat it. Take small portions of the batter and put it in the pan while giving a circular shape like fritters. Cook for 2/3 minutes. Then flip off and cook the other side.

Serve hot with mayonnaise or English mustard sauce.

Omlette Muffins with vegetables for breakfast
Omlette Muffins

Ingredients

Egg – 3
Chopped tomato – 1 large
Chopped onion – 1 medium
Pepper powder
Chopped green chilli (optional)
Any dry herbs
Al seasoning spices – 1 tsp
Salt
Grated cheese – 1 cube
Baking powder – 1 pinch
White oil for greasing

Recipe:

Take a mixing bowl and mix the chopped tomato – onion – green chilli, grated cheese, salt, all seasoning spices, dry herbs, pepper powder. Now take six muffins molds and grease it. Put some of this mixture into all the molds and keep aside.  Now, beat the eggs with a pinch of baking powder and salt. Put the beaten egg on the mixture and place it into the preheated oven. Set the convection mode in full power for 10 minutes.  After 10 minutes take one of them out from the oven and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that the muffins are ready.
Serve hot with tomato ketchup or any other sauce which you like.

Whoever likes egg, must be loving omelet or omelette. Spanish omelet is an easy breakfast recipe that can be prepared in a jiffy.

Spanish Omelet

Ingredients:

Egg - 2 pcs
Baking powder - ½ tsp
Salt
Pepper powder (as per your taste)
Chopped onion
Chopped potato
Chopped red bell pepper - 1tbsp
Chopped yellow bell pepper - 1 tbsp.
Chopped green bell pepper - 1 tbsp
Chopped tomato - 1 tbsp
Chopped parsley - 1tsp
White oil - 2 tbsp

Recipe:

Take a mixing bowl and mix the eggs, salt, pepper powder and baking powder. Beat it very well and keep aside it with a lid for 5 minutes. Now add all chopped vegetables, parsley and mix it well.

Now heat oil in a pan and pour the mixture and wait for 2-3 minutes in low flame. When it is fully cooked, remove from the pan by inverting on a plate. Serve hot.

Egg devil or dimer chop is one of the most famous street foods of Kolkata. This mouthwatering Bengali snacks was also very popular in various occasions in our childhood days.

Ingredients:

Boiled egg
Boiled and smashed potato
Chopped onion
Ginger paste
Chopped coriander leaves
Turmeric powder
Red chilli powder
Tomato ketchup
Salt
Cumin seeds
Dry red chilli
Corn flour
Bread crumbs
White oil

Recipe:

Dry roast the cumin seeds and dry red chilli and ground it. Keep it aside with a lid.
Then heat 1tbsp oil in a pan and put chopped onion and fry it till golden. Now add ginger paste, a pinch of turmeric powder, salt and chilli powder and stir well. Then add smashed potato and chopped coriander and mix. When properly mixed add the dry roasted powder and remove from fire.

Now cut the boiled eggs in half with a sharp knife.
Then take a piece of egg and some smashed potato in your hand and stick them together in the shape of a full egg. This is an egg devil. Prepare devil with all the pieces of half egg.

Now take a bowl and mix some corn flour and water like starch. Spread some bread crumbs in a flat plate.
Then take a devil and deep into the corn flour starch and immediately roll it over the bread crumbs. 
Now heat oil in a deep pan and deep fry the devils till golden.


Serve hot with salad.

Vegetable egg wrap is an easy to cook recipe that I came up suddenly while thinking of how to prepare something different for a Sunday breakfast.

Vegetable Egg Wrap

Ingredients:

Chopped potatoes
Chopped capsicum
Chopped tomato
Chopped garlic
Chopped onion
2 eggs
Salt
Butter
Dry celery
Dry parsley
Chilli flakes
Soda water
Baking powder
Crushed black pepper

Preparation:

Heat butter in a pan. Add chopped garlic and onion. Sauté it.
Now add chopped potatoes and fry lightly. Add capsicum and tomato and mix well.
Add salt, black pepper powder and toss it. Now add the herbs (celery, parsley).
Mix well and remove from heat.
Beat eggs in a pot and add baking powder, 1 tbsp soda water and salt and keep it under lid for 10 minutes.
After 10 minutes heat butter in a pan. Beat the egg mix again and pour on the pan.
Keep it for 2-3 minutes. Now sprinkle some crushed black pepper and chilli flakes.
When it is cooked, take a flat plate and keep on top of the pan. Now turn it over carefully so that the egg is separated from the pan and comes on the plate.
Now put the stuffing on the fried egg and wrap it gently.


Serve hot with ketch up.

Mutta Roast

Mutta roast is a Keralian egg roast recipe. In Malayalam Mutta means egg. This South Indian egg recipe can be eaten with rice.

Ingredients:
2 boiled eggs
Chopped onion -2 tbsp
Chopped garlic - 2 flakes
Chopped tomato – 11/2 tbsp
Cumin powder -1 tsp
Coriander powder – 1 tsp
Red chilli powder – 1 tsp
Salt
Turmeric powder – 1 tsp
Curry leaves
Mustered oil – 3-4 tbsp
Mustard seeds -1 tsp

Preparation:
Heat oil in a pan and add mustard seeds and curry leaves. When it starts spluttering add chopped onion, garlic and tomato. Fry it for 2 minutes and add water. Add all spices and salt. Mix very well. Now add eggs and when it becomes dry remove from flame and pour into a bowl.
