Poila Boishakh theme cake

Subho nabobarsho 1425…..poila boisakh means Bengali new year started today. This day obviously very special to all Bengali. Actually Bengalis are very fond of food and festival and we wait throughout the year for our famous Durgapuja. But we have lots of occasions to celebrate with some sumptuous food and rituals. Poila boisakh is just one of them. In Bengali we have a famous proverb “bangalir baro mas e tero parbon”(in 12 months Bengalis have 13 festivals) and Poila Boisakh is the first festival of the year. How we celebrate this day…..generally in Bengal in this day maximum shops start their new account with some puja, which is called khata puja and that khata (book of account) is very special, that comes with red cover and knot with a thread, called ‘kheror khata’. Now a days so many people stay out of Bengal for their jobs. So they always try to make a gathering with their Bong friends with some cultural programmes.

For the last 10 years I am also out of Bengal, even out of India. So we also celebrate our Poila Boisakh with some bong friends with some mouthwatering dishes. And this time I made a cake on Poila Boisakh theme, where I tried to present few stuffs related to the occasion. As the gathering was arranged with the famous pot-luck concept, along with my cake, there were many mouthwatering traditional Bengali dishes brought by my friends. The menu includes dimer devil, Bengali pulao, chicken curry, mutton curry, bhapa ilish, amer chatni. The food was well accompanied by famous Bong adda with card games (taser adda). Overall, it was a fantastic day spent with some adorable friends. We enjoyed it thoroughly.

Ingredients:

Whole wheat – 1 cup
Vegetable oil – 1/3 1/3 cup
Jaggery powder – ¼ cup
Sugar powder – ¼ cup
Butter milk – ½ cup
Hot water – ½ cup
Baking powder – 1tsp
Baking soda – ½ tsp
Grated fresh ginger – 1 tbsp
Crushed black pepper – ½ tsp
Cinnamon powder – ¼   tsp
Clove powder – ¼ tsp
Salt – ¼ tsp

Eggless Ginger Cake

Recipe:

1.      Take a large mixing bowl and mix all dry ingredients like whole wheat flour, baking powder, baking soda, cinnamon powder, clove powder, crushed black pepper, salt and grated ginger.
2.      Sieve it once.
3.      Take another mixing bowl and mix oil, butter milk, jaggery and sugar powder with a spatula.
4.      Then add all dry ingredients and mix gently with one side direction.
5.      The batter should be ribboning. At this stage add some hot water to make the batter consistency ribboning.
6.      Now take a greased cake tin and pour the batter.

7.      Bake it in preheated oven at 180c for 25 -30 minutes.

Ingredients for Zebra Cake:

Flour – 1 cup
Butter – 50 gms
Egg – 2
Sugar – ½ cup
Coco powder – 1 tbsp
Chocolate essence – few drops
Vanilla essence – few drops
Milk

Recipe of Zebra Cake:

At first grind the sugar and keep aside.
Now take a mixing bowl and put butter and sugar powder and beat well. Then add an egg and beat it well and add few drops of vanilla essence.
Now take a mixing bowl and mix 1 cup of regular flour and baking powder.
Add this flour into beaten egg and mix well. If you feel the batter is thick, add lukewarm milk. Actually this batter should be ribboning.
Now pre heat the oven in convection mode at 180c for 5 minutes.
Divide the batter in two portions and keep them in two separate bowl.
Now add coco powder and chocolate essence in one bowl and mix it very well.
Now grease the baking tin and pour 2 tbsp white batter and wait for few second. When you see that the batter is spread in the tin, pour 2 tbsp chocolate batter and repeat this process. When two types of batter will is finished take a tooth pick and just cut some line over the batter. The lines make a nice design. Now place it into oven in 180c for 25 minutes.
Take the cake tin and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that your zebra cake is ready.
After sometime cut the cake and you can see the design like zebra.

The word Ganache came from a French word “jowl”. This is a glaze made by chocolate and cream and is used for icing or filling of pastry. Ganache is like a sauce in texture and butter is used for extra shiny look. 

In my opinion, Ganache is a very easy and quick way to make a decorative cake. Actually last month I wanted to celebrate my princess' birthday. And I wished to make a birthday cake. But I am not comfortable enough to make a birthday cake. Sometime icing part is very difficult for us, who tries icing cake only for birthdays or any special occasions. Icing needs a bit of regular practice. So I thought of making a ganache cake for my little princess.

Ingredients for Ganache cake:

For cake:

Regular flour – 1 cup
White oil – ½ cup
Sugar – ½ cup
Coco powder – 2 tbsp
Vanilla essence – few drops
Baking powder – 1 tsp
Egg – 2 pcs

For ganache:

Choco chips or any plain chocolate bar (without dry fruits) – 100 gms
Fresh cream – 100 gms
Butter – 1 tbsp

For decoration:

Strawberry
Cake sprinkles
Gems

v  How to bake chocolate cake:

At first grind sugar and keep aside.

Take a mixing bowl and mix 1 cup of regular flour, coco powder and 1tsp baking powder.

Now take another mixing bowl and put butter and powder sugar and beat well. Then add eggs and beat well. When it starts looking floppy add the flour mixture and mix well with a spatula. This mixing is most important step to make a good cake. It is called fold and the movement should be on the same side (clockwise or anticlockwise).

Now grease the cake mold. Pour the batter in the mold and gently place it into preheated oven in convection mode at 180c for 20 – 25 minutes.

After hearing the beep sound, take a toothpick and gently prick the cake from top. If the toothpick comes out clean this indicates that your cake is ready.

v  How to prepare Ganache:

Take 100 gms choco chips or chocolate bar (I have used choco chips). Then heat 100 ml fresh cream in a pan but do not boil it. So the ratio I used for Ganache is 1:1 for chocolate and cream. When this is slightly hot, add the choco chips and stir it. Remove the pan from the heat and stir. When the chocolate starts melting put 1 tbsp butter. Here butter will give an extra glaze. Your ganache is ready now.

Ganache is not very hot. So you can use it immediately. Now place your cake and take a ladle full of ganache. Pour ganache on the middle of the cake and you will notice that ganache is flowing down from cake and making a design. This will happen because of its texture.

Now, it is time to decorate your cake with fresh strawberries, sprinkles, gems or anything which you like.

Note: For Ganache, the proportion and temperature are very important and differs according to the purpose of use. For my ganache cake, I used 1:1 of chocolate and cream. For a thinner ganache, cream proportion needs to be increased upto 2. Pour the ganache over cake when it is still hot. It should not be too hot as then it will be too loose and will run down the cake. And it should not cool down completely; in that case it will be difficult to pour over the cake smoothly.

Strawberry flavoured upside down cake

Ingredients:

Regular flour – 1 cup
White oil – ½ cup
Sliced strawberry – 1 cup
Sugar – ½ cup
Baking powder – 1 tsp
Egg – 2
Strawberry essence – few drops
Strawberry colour – 1-2 drop (optional)

Recipe:

At first grind sugar to make sugar powder.
Take a mixing bowl and mix 1 cup of regular flour and 1tsp baking powder.
Now take another mixing bowl and put oil and powder sugar and beat well. Its good to use a beater. Then add eggs and beat well. When it starts looking floppy add strawberry essence and coulour (optional), flour and mix well with a spatula. This mixing is most important step to make a good cake. It is called fold and the movement should be on the same side (clockwise or anticlockwise).
Now grease the cake mold and make a layer with fresh sliced strawberry. Gently pour the batter in the mold above the layer of strawberry slices. Place it into preheated oven in convection mode at 180c for 20 – 25 minutes.
After hearing the beep sound, take a toothpick and gently prick the cake from top. If the toothpick comes out clean this indicates that your upside down cake is ready.

Now turn over the cake on a plate. As a result the strawberry layer will come on top. This is the specialty of upside down cake; the bottom side will come on top unlike other cakes.

Oats Apple Muffins

Ingredients:

Regular flour – ½ cup
Oats – ½ cup
Chopped apple – 1 cup
Baking powder – 1 tsp
Egg – 2 pcs
Butter – ½ cup
Sugar – ½ cup
Vanilla essence
Cinnamon powder – 1 tsp

Recipe:

At first, grind the oats to make oats flour.
Now take a mixing bowl and sieve the oats and regular flour, baking powder and cinnamon powder and keep aside.
Then take a mixing bowl and beat the sugar and butter. After 2-3 minutes add two eggs and whisk it. When you feel that it has become flappy, add vanilla essence and two types of flour, baking powder and cinnamon powder. Mix it properly. This is the most important step of making cake.
Now take the chopped apples and toss it with 1 tsp regular flour. then mix it with the batter.
Now take muffins mold and pour the cake batter and place it in the preheated oven in 180c for 20 minutes.

When time is over, take a muffin and gently prick it from top with a toothpick. If the toothpick comes out clean this indicates that your muffins are ready.

Butter – 50 gms
Egg – 2
Sugar – ½ cup
Vanilla essence

Recipe:

At first grind the sugar and keep aside.
Now take a mixing bowl and put butter and sugar powder and beat well. Then add an egg and beat it well and add few drops of vanilla essence.
Now take a mixing bowl and mix 1 cup of regular flour and 1 – tsp baking powder.
Add this flour into beaten egg and mix well. If you feel the batter is thick you can add lukewarm milk. Actually this batter should be ribboning.
Now pre heat the oven in convection mode 180c for 2 – 3 minutes.
Now grease the baking tin and pour the batter and place it into oven in 180c for 25 minutes.

Take the cake tin and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that your cake is ready.

Easy Christmas palm cake recipe
Christmas Palm Cake

Ingredients:

Regular flour – 1 cup
Egg – 2
Butter – 50 gms
Baking powder – 1 tsp
Sugar – ½ cup
Vanilla essence 2–3 drops
Rum – ½ cup
Cinnamon powder ¼ tsp
Nutmeg powder ¼ tsp
Chopped dry fruits and jelly belly
Grated orange zest ½ tsp

Recipe:

Soak the chopped dry fruits like dark and light raisons, nuts and jelly belly and grated orange zest.
 Now grind the sugar and keep aside.
Take a mixing bowl and mix 1 cup of regular flour and 1tsp baking powder. Sieve it well and add cinnamon powder and nutmeg powder.
Now take another mixing bowl and put butter and powder sugar and beat well. Then add eggs and beat well. When it starts looking floppy add vanilla essence, flour, soaked dry fruits and orange zest and mix well with a spatula. This mixing is most important step to make a good cake. It is called fold and the movement should be on the same side (clockwise or anticlockwise).
 Now grease the baking tin and pour the batter and place it into preheated oven in convection mode at 180c for 25-30 minutes.

After hearing beep sound. take a toothpick and gently prick the cake from top. If the toothpick comes out clean this indicates that your palm cake is ready.

easy Banana Loaf recipe in microwave
Banana Loaf

Ingredients:

All-purpose flour – 1 cup
Ripe banana – 2
Egg – 2
Butter – ½ cup
Sugar – ½ cup
Baking powder – 1tsp
Vanilla essence

Recipe:

At first grind the sugar and keep aside.
Smash the bananas to make a smooth paste and keep aside. It is better to use a blender
Now take a mixing bowl and put butter and sugar powder and beat well. Then add eggs and beat well and add few drops of vanilla essence.
Take a mixing bowl and mix 1 cup of regular flour and baking powder.
Now, slowly add this flour into beaten eggs and mix well. And at last add the smashed banana and mix well. If you feel the batter is thick you can add lukewarm milk. Actually this batter should be ribboning.
Now pre heat the oven in 180c for 2 minutes.
Grease the baking tin and pour batter and place it into oven in 180c for 20 minutes.
Take out the cake tin and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that your banana loaf is ready.

walnut brownie with vanilla icecream and chocolate sauce
Walnut Brownie
Brownie with vanilla ice cream is one of classic dessert combination liked by almost everybody. I tried my hand in preparing walnut brownie at home. 

Ingredients:

Regular flour – 100gms
Castor sugar – 150 gms
Baking powder – 1tsp
Butter – 100gms
Coco powder – 4tbsp
Vanilla essence – 1tsp
Egg – 2
Chopped walnut – 50gms

Recipe:

At first take a mixing bowl and mix coco powder, flour, powdered brown sugar and baking powder. Now add butter, egg, vanilla essence and beat well. This is the main thing of this brownie. Now take a baking dish and grease it with some butter or vegetable oil and pour the batter. Then spread some chopped walnut and press it with a spoon. Now shift it into oven at micro full power (100%) for 6 minutes.

Serve hot brownie with vanilla ice cream and spread some chocolate sauce.

Muffins
This easy muffins recipe is my daughter's favorite. She liked it instantly and finished the oven fresh muffins within a few moments.

Ingredients:

Regular flour – 1 cup
Egg – 1  
Butter – 50gms
Baking powder – 1tsp
Sugar – ½ cup
Vanilla essence 2–3 drops
Milk – 1 cup
Choco chips

Recipe:

At first grind the sugar and keep aside.
Take a mixing bowl and mix 1 cup of regular flour and 1tsp baking powder. Sieve it well.
Now take another mixing bowl and put butter and powder sugar and beat it well. Then add an egg and beat well. Now add few drops of vanilla essence and milk.
Then add the flour into this and mix well with a spatula.
Now grease the muffins mould and pour the batter. Put a few choco chips on top of it. Place it into oven in convection mode at 180c for 20 minutes.

Take one muffins and gently prick it with a toothpick from top. If the toothpick comes out clean this indicates that the muffins are ready. 
For variation, instead of choco chips jelly belly or dry fruits can be used.

Choco Pops

This recipe is especially for our naughty and cutie kids. Actually sometimes they don’t like to eat regular cake or muffins. This is absolutely my own experience. So one day I had makes these choco pops for my daughter and she is very happy to see it and told me…..”Yummy”….

Ingredients:

Chocolate muffins 3mufins
Condense milk 1tbsp
Toothpicks
Milk powder
Crushed cashew nuts

Recipe:

At first crush the muffins with your palms. Now add condense milk and mix it gently. If you feel it sticky you can add a little bit of water and make dough. Now keep it in a freeze for 15 minutes. After that make some balls from the dough.  Now spread some milk powder in a flat plate and the balls roll it over. You can also use crushed cashew nuts instead off milk powder. Now take toothpick and pined the ball on it.
