easy chicken korma recipe
Chicken Korma

Ingredients:

Chicken – 750 gms
Curd – 4 tbsp
Finely sliced onion – 1 medium
Onion paste – 3 medium
Garlic  paste – 8 cloves
Ginger paste – 1 tsp
Cumin powder – 2 tsp
Coriander powder – 2 tsp
Black pepper powder – 2 tsp
Turmeric powder – 1 pinch
Kashmiri red chilli powder – 1 ½ tsp
Salt
Sugar
Garam masala powder – 1 tsp
Chopped coriander leaves – ½ cup
Ghee – 2 tsp
Rose water – few drops
White oil – 6 tbsp

Recipe:

Marinate the chicken with curd and one pinch of turmeric powder and keep aside for an hour.
Then heat oil in a pan and fry the sliced onion till golden brown. This is called beresta. Keep this aside.

Now add onion and garlic paste in the same oil and fry it till golden. Then add ginger paste and stir well. Add red chilli powder and  marinated chicken and mix well. Add sugar and stir continuously till the oil is separated from the spices. Now take a small bowl and mix cumin, coriander and black pepper powder with some water and make a paste. Then add it with the chicken. Mix it gently and add salt. Add little bit of water and cover the chicken with a lid till the chicken becomes soft. Now remove the cover and add chopped coriander leaves, garam masala powder and beresta (fried onion) and mix it. Now turn off the gas and put 2 tbsp ghee and few drops of rose water and cover it for 5 minutes. 

Serve hot chicken korma with paratha, naan, pulao etc whatever you feel like.

Methi Murg (methi chicken) is an easy to cook side dish. I love this dish with roti or paratha. Learn how to cook this simple yet delicious fenugreek flavoured chicken dish at home.

Methi Murg or Methi Chicken

Ingredients:

Chicken – 250 gms
Fresh methi (fenugreek) leaves – 2 handfuls
Fenugreek seeds – 1 tsp
Chopped onion – 2 tbsp
Ginger paste – 1 tsp
Garlic paste - ½  tsp
Chopped tomato – 1 medium
Dry red chilli – 1 pc
Salt
Turmeric powder – 1 tsp
Kashmiri red chilli powder - ½ tsp
White oil – 2 tbsp

Direction:

Heat oil in a pan. Put fenugreek seeds and dry red chilli. After few seconds when the seeds turn brown add chopped onion and sauté it. When the onions look translucent, put ginger–garlic paste and fry it for 1-2 minutes. Then, add chopped tomato. When the tomato becomes soft, add chicken and mix well. Now add turmeric powder, red chilli powder and salt and stir well. When the oil comes out from chicken add fresh methi leaves and mix well. Now add a little bit of water and cover it till the chicken is soft. After 7-8 minutes your methi murg is ready. Serve hot with roti or paratha.

Chicken Bharta

Ingredients:

Chicken - medium pieces
Bay leaf
Black cardamom
Green cardamom
Chopped onion
Ginger paste
Garlic paste
Turmeric powder
Red chilli powder
Cumin powder
Coriander powder
Chopped tomato
Cashew paste
Curd
Salt
Butter
Garam masala powder
Dry fenugreek leaves
Chopped coriander leaves
White oil

Recipe:

Heat oil in a pan and put two type cardamoms and bay leaf.  After 1 minute add chopped onion and fry it till golden. Now add ginger–garlic paste, turmeric-cumin-coriander-red chilli powder and mix very well. Then add chopped tomato and fry it. After that add chicken and after 2 minutes add cashew paste, curd and stir it very well till the oil is separated from chicken. Now add a little bit of water and cover it till the chicken becomes soft. Keep the chicken in a low flame and add butter, garam masala powder, dry fenugreek leaves and chopped coriander leaves and mix it lightly.

 Serve hot with paratha or roti.
