Me and my family is in love with anything grilled - be it chicken, fish, broccoli or pineapple. Today I made grilled chicken in pan and prepared white sauce to spread over it. Along with this I made vegetables tossed in high flame to accompany with chicken. I also cooked spaghetti to make it a complete meal. Let me know if you like the recipe. Happy cooking J

Ingredients:

 Chicken breast – 250 gms
Spaghetti – 100 gms
Yogurt – ¾th cup
Chopped garlic – 1 ½ tbsp
Chilli flakes – 1 tsp
Herbs – as per your choice
Ginger- garlic paste
Flour – 1 tbsp
Milk – ½ cup
Black pepper (crushed)
Lemon juice – 1tsp
Salt
Carrot
Red and yellow bell pepper
Broccoli
Green beans
Zucchini
Black olives
Olive oil

Recipe:

Marinate the chicken breast piece with salt, crushed black pepper, ginger garlic paste, lemon juice and keep aside for 30 minutes.
Boil the spaghetti as per packet instruction and reserve the boiled water what you will get from spaghetti.
****Always reserve the water after boiling pasta. It enhances the taste if used in cooking.
Grease a nonstick pan and heat very well.
Cook one side of the chicken in high flame for 4 minutes, then flip off and cook the other side for same time.
Place your grilled chicken in a serving plate.

Now it’s time to make the sauce.
Heat 1 tbsp oil in a pan and put chopped garlic.
When you get the nice aroma from garlic switch off the gas and add herb (here I added fresh parsley), chilli flakes, salt, crushed black pepper and mix.
Then add yogurt and mix it well.
Your sauce is ready.
Just pour it in the grilled chicken.

In the grill pan, put the vegetables and toss it in high flame with herbs, salt and pepper.
After 2 minutes place it in serving plate.

Now make the spaghetti.
Heat oil in a pan and put chopped garlic and stir it.
Add 1tbsp flour and stir it occasionally.
Add the water that you reserved from spaghetti and continuously stir it, don’t allow to form lump.
Add spaghetti, salt, pepper and mix it very well.
Add cream and mix well in low flame.

Add chopped black olives and serve with grilled chicken.

 Kebab…………I love kebab. This is the one and only dish which I want to eat anytime, anywhere. The smoky flavor makes me crazy. Not only me, my whole family loves kebab, even my three and a half year old daughter also likes it.

Kebab is a dish from Middle Eastern, Eastern Mediterranean and South Asian countries. When you serve, it should be hot. Traditionally kebabs were made by lamb. But it depends on local taste and society. Actually tastes differ man to man and that’s why you will get many different types of meat including beef, chicken, goat, pork, fish etc. Like other ethnic foods spread by travelers around the world, kebab, which was a part of regular cuisine in most of the Middle Easter and South Asian countries, is now enjoyed by people around the world.

Nowadays kebab/kabab is the most popular dish in urban India. Any get to gather or party will be incomplete without kebab as a starter. Banjara kebab is a type of kebab which I learned from a regional television cookery show. And it is very easy to make at home in your microwave and very tasty too.

Recipe of Chicken Banjara Kabab

Ingredients:

Boneless chicken cubes – 300 gms
Dry red chilli – 6-7 pcs
Cumin – 1 tsp
Coriander – 1tsp
Kababchini – 1 tsp
White pepper corn – 1 tsp
Nutmeg – 1/4th tsp
Ginger-garlic paste – 1 tsp
Peanut/groundnut paste – 2 tbsp
Dry mango powder – 1 tsp
Kashmiri red chilli powder – 1 tsp
Hung curd – 2 tbsp
Salt
Lemon juice
Wooden skewer

Method:

Marinade the chicken with lemon juice and salt for around 30 minutes.

Now take a pan and roast dry red chilli, cumin, coriander, kabab chini, white pepper corn and nutmeg. Then grind and keep aside with lid.

Now marinate the chicken with lemon juice and salt for 15-20 minutes.

After 15 minutes you will get some excess water from the marination, so drain that water and again marinate the chicken with ginger-garlic paste, groundnut paste, dry mango powder, kashmiri red chilli powder, hung curd and the grinded spices for 30 minutes.

Now take some wooden skewer and string the chicken pieces one by one and cook it in microwave mode for 4-5 minutes. While cooking in microwave, instead of putting the skewers on tray, take a medium size bowl and keep the skewer on it so that both ends of the skewer touch the edge of the bowl and the chicken pieces do not touch the base of the bowl. The air gap between the edge of the bowl and chicken will help it to cook all sides of chicken well. This will also help to keep the microwave clean as the juice from chicken will drop in the bowl.

Garnish chicken banjara kabab neatly and serve hot. Let me know how it turned out at your end. Happy cooking :-)

Grilled fish recipe|Grilled Bhetki Recipe|Tawa tossed vegetables

I love grill and not only me; my whole family loves grill.  The aromas of grilling chicken or fish attracts me so much that wherever and whenever I get the aroma, I start filling hungry. J

This grilled fish recipe is very easy and you can make it in a jiffy. Actually I love to cook those dishes which are very simple and easy; even a novice can prepare it. My second priority is time. I like recipes which can be prepared in a jiffy as nowadays no one has enough time to go for a lengthy procedure.

And for this recipe if you think you a grill pan is must to get the nice dark stripes of grill, you can very well use grill pans available in the market. But you do not have a grill pan, not an issue. I have a trick to get grill mark without grill pan. Take a nonstick pan and place 2-3 wooden ice-cream sticks and place the fish pieces. When cooking is finished; you will get the same grill marks in your fish fillet.

Any good fish fillets can be grilled. Here I have used bhetki fillets as this is one of my favorites. Though salmon can be irresistible, it is not widely available in India. Sole fish is also very widely used in Indian restaurants. Pomfret/paplet is commonly used here for grilling whole fish. Grilled fish recipe:

What you need to make grilled fish:

Fish fillet (bhetki) – 4 pcs
Ginger-garlic paste - 1tsp
Chopped celery – 2 tbsp
Salt
Chilli flakes – 1 tsp
Honey – 1 tbsp
Lemon juice – 1tbsp
Broccoli
Red bell pepper
Yellow bell pepper
Baby corn
Lettuce
Olive oil – 3 tbsp

How to make grilled fish in tawa with tossed vegetables:

Ø  Take all vegetables and cut them into uneven shape.
Ø  Now take a mixing bowl and mix the oil, ginger-garlic paste, chopped celery, salt, chilli flakes, honey, and lemon juice. Marinate the fish in the mix for 15-20 minutes.
Ø  Now take a pan and place it over the gas and heat it. Then place the marinated fish fillets in the pan in high flame. After 2-3 minutes, carefully flip the fish using a spatula with thin edges.
Ø  Cook the other side for 2 minutes. Now shift the fish from the pan.
Ø  In the meantime, when the fish is in the pan, put the vegetables except lettuce into the same mixing bowl where you marinated the fish fillets. Now put the vegetables in the pan in high flame and toss it for 2-3 minutes.
Ø  Now take a serving plate and place the fishes. Place the vegetables and lettuce on the other side of the plate.
Ø  Your dish is now fully ready to serve.

NB: An important point to remember is that it takes very little time to grill fish. So keep checking the doneness. The fish should be properly cooked but not over cooked. If it is overcooked it will be tough and will break.

Easy pan fried tandoori pomfret recipe
Tandoori Pomfret

Ingredients:

Pomfret – 2 pcs
Tandoori masala – 1 tbsp
Lemon juice – few drops
Salt
Red chilli powder – 1 tsp
Hung curd – 1 tbsp
Ginger garlic paste – 1 tsp
White oil

Method:


Marinate pomfrets with a few drops of lemon juice and salt and keep aside for 10 minutes. Then add all ingredients except oil in the marinated fish and again marinate it for 2 hrs. 

Now grease a flat pan and put the marinated fish. Keep it for 5 minutes. When one side is done, turn over the fish and cook for another 2-3 minutes. 

Your pan fried tandoori pomfret is now ready. Serve hot with salad.

Caribbean Grilled Chicken

Ingredients:

Chicken breast – 2 pieces
Red chilli 3 – 4 pcs
Chopped onion – 1 tbsp
Sugar – 1 tbsp
Garlic 6-7 cloves
Green cardamom – 2 pcs
Cinnamon – 1 inch
Cloves 4 – 5 pcs
Nutmeg powder – ¼ tsp
Soya sauce – 1 ½ tbsp
Thyme or any other herbs (optional)
Pepper powder
Orange juice – ½ cup
Lemon juice – 1 tbsp
Salt
White oil

Recipe:

Take a mixing blender and blend the all ingredients except chicken, salt and oil to make paste.
Then take a knife or fork to pick the chicken because the spices enter into the chicken and it will be tastier.
Now marinate the chicken with that paste and salt and few drops of oil and keep aside for half an hour.
After 30 minutes take a grill rack and place the marinated chicken. Then shift it into oven and grill it for 5 minutes for each side.
Serve hot.
Chicken breast pieces do not take much time to cook and if it is overcooked it will be hard. So be careful while grilling the chicken breast pieces.
