Hara Bhara Kebab is very popular veg starter in India, especially North India. This kabab is available in almost all decent restaurants in India and is a must have for all veg lovers. This is very mouthwatering and made by some green vegetables like spinach, green peas, coriander leaves, potato and paneer. In this recipe spinach and green peas are hero. Hara bhara kabab is a very healthy dish because of its ingredients. In this recipe I have shallow fried the kebabs but you have one more option, deep fry it. Actually me and my family like the aroma of smoke so I chose the first option; means shallow fry.

Ingredients for hara bhara kabab:

Spinach leaves – 1 bunch
Green peas – 1 cup
Boiled potato – 2 medium
Smashed paneer – ¾th cup
Chopped green chilli – 1 tbsp (according to your taste)
Chopped coriander leaves – ½ cup
Coriander powder – 2 tsp
Cumin powder – 1 tsp
Garam masala powder – 1 tsp
Chat masala – 1 tsp
Dry mango powder – ½ tsp
Salt
Bengal gram flour (chattu) – 4-5 tbsp (as required)
Ghee
Cashew nuts

Ingredients for green chutney:

Mint leaf – 1 cup
Coriander leaf – 2 cups
Green chilli – 2 pcs
Curd – 2 tbsp
Salt
Lemon juice – 2-3 tbsp
Chat masala – 1 tsp

How to make hara bhara kababs:

Blanch the spinach and green peas and strain the water. Keep aside. Now chop the spinach.

Take a large mixing bowl and smash the spinach and green peas. Then add boiled potato, paneer and ginger paste.

Then smash all these ingredients and add green chilli and coriander leaves and mix it.
Then add all the spices like coriander – cumin powder, garam masala powder, dry mango powder, chat masala and salt. Mix it very well.

Now add Bengal gram flour and make dough. This ingredient will be used for binding. Mix very gently and make smooth dough.

Then from this dough make 24 balls and turn them into kebab shape with your palm (ie. flatten the balls). Now put half a cashew nut on top of the kebabs.

 Now take a tawa or fry pan and brush some ghee. Heat it and place the kebabs.
Keep it till golden brown and flip off the kebabs and fry the other side.
If you want you can deep fried it.

Your Hara Bhara kebabs are now ready. Serve hot with green chutney.

Recipe of green chutney:

Take all ingredients of green chutney and blend it to make a smooth paste. Now your green chutney is ready also. If you like you can add some garlic in the chutney.

Bread roll is an easy evening snacks recipe. Team this up with a hot cup of tea or coffee. Bread rolls are basically stuffed with potato fillings and deep fried with a gram flour coating for a quick munchy bite of evening snacks. Learn this easy bread rolls recipe to win a quick round of applause at your evening adda.

Ingredients:

Bread without side
Boiled potato – 1 medium
Boiled green peas – 1 tbsp
Finely chopped tomato – 1 tbsp
Roughly chopped onion – 1 tbsp
Grated ginger – 1 tsp
Chopped green chilli
Chopped coriander leaves – 1 tbsp
Turmeric powder – 1 pinch
Red chilli powder (optional)
Garam masala powder ½ tsp
Gram flour – 1 cup
Salt
White oil

Recipe:

At first smash the boiled potato and mix with green peas.

Then heat 1 tbsp oil in a pan and put chopped onion and sauté it. Then add grated ginger and chopped tomato and fry it for 1-2 minutes. Then add a pinch of turmeric powder and red chilli powder (optional) and mix. Then add smashed potato and salt and mix it very gently. Now add chopped green chilli and coriander leaves.  At last sprinkle some garam masala powder and remove from gas. Your stuffing is now ready.

Now take a bowl and mix gram flour, salt and water to make a smooth batter.

Damp your palm and take a bread slice and as a result the bread slice will be slightly damped. Then take 1 spoon of stuffing  and place it in the middle of the bread slice and fold the slice. Now deep it into the batter and deep fry till golden.


Serve as evening snacks with tomato ketchup.

Bengali Style Koraishutir Kachuri (Puri stuffed with green peas)

Koraishutir kachuri or motorshutir kachuri is one of the most sought after dish for Bengalis in winter. The combination of koraishutir kochuri and aloor dum is simply irresistible. Koraishutir kochuri is basically puri stuffed with fresh green peas paste and aloor dum is a special Bengali side dish prepared from potatoes.

Ingredients:

Regular flour 3 cup
Salt
White oil
Green peas 1 cup
Salt
Sugar 1 pinch
Dry roast spices (cumin, dry red chilli, cardamom, cinnamon, and clove)

Recipe:

At first boil green peas and make a paste in the mixer. Dry roast cumin seeds, red chili and cardamom, clove, cinnamon and grind it in the mixer to make a spice powder and keep aside with a lid. Now heat 1 tbsp oil or ghee in a pan and put the green peas paste. Keep stirring and add salt and a pinch of sugar. After a while, spread the freshly prepared spice powder.

Now take a large bowl and take flour, 5-6 tbsp oil, a pinch of salt and mix it gently. Now add sufficient water to make dough. Make small balls from the dough, make it shape like a small bowl, put a small portion of green peas paste and fold it. Take it in one palm and place the other palm on top and rotate it. This will now look like balls stuffed with green peas paste. Now roll the balls into circles. Do not try to make this too thin as the stuffing will come out then.

Now heat sufficient oil in a deep pan or kadai and fry the kachuris one by one till they puff up and you see light golden colour.

Serve hot kachuri with aloor dum.  I would recommend keep the last one or two pieces of kachuri to be eaten with semiya kheer. This should complete a sumptuous dinner.

Ingredients:

Green peas – 200 gm
Kalakand - 200 gms
Milk powder - 3 tbsp
Chopped mango papad - 2/3cup
Sugar - ½ cup
Green cardamom powder - 1 pinch
Paper cups

Recipe:

Boil the peas and make a paste.
Now take a pan in low flame and put peas paste. Stir it and add milk powder and sugar and mix it very gently in low flame. When the peas paste is separated from the pan add green cardamom powder mix gently. Remove it from heat and keep aside.

Now take a mixing bowl and mix kalakand, chopped mango papad and peas paste which you made.  Mix it very gently and make a smooth paste. Prepare various shapes from this dough and keep in paper cups.

Matar Paneer

Matar Paneer - Ingredients:

Green peas (matar)– 100 gms
Paneer cubes (cottage cheese) – 100gms
Salt
Tomato puree – 3 tbsp
Curd – 1 tbsp
Turmeric powder
Red chilli powder
Ginger paste – 1 tsp
Cumin seeds – 1 tsp
Cumin powder – ½ tsp
Coriander powder – 1 tsp
Garam masala powder –  ¼  tsp
White oil – 2 tbsp

Matar Paneer - Preparation:

Heat oil in a pan and put the paneer. When the colour is changed,  remove from heat.
Now add cumin seeds in same oil and wait for its nice aroma. Then add ginger paste and fry it for 1 minute. Then add all spices and sugar and stir well. Now add tomato puree, curd and stir it. When oil is separated from the spice, add green peas and salt. When the peas are tender add paneer.

Serve this homemade matar paneer hot with roti or paratha.

Makai Matar Paneer

Makai matar paneeer is an Indian medium spicy side dish made of sweet corn, green peas and paneer.

Makai Matar Paneer - Ingredients:

Crushed green peas (matar)
Grated paneer (cottage cheese)
Crushed sweet corn (makai)
Curd
Coriander powder
Dry fenugreek leaves (kasuri methi)
Cumin seeds
Salt
Red chilli powder
Sugar
White oil

Makai Matar Paneer - Preparation:


Heat oil in a pan and add cumin seeds. When you start getting nice aroma, add crushed peas and stir it. In a bowl take crushed corn and curd and mix very well. Then add this mix in the pan and mix it. Now add all spices, salt and sugar. Stir it very well and add grated paneer. Mix it well and add little water and cover it. After 2 minutes, when it becomes dry take off the heat and serve hot in a plate with chapatti or parantha.
