Thai Chicken With Basil

Ingredients:

Boneless chicken – 300 gms
Fresh basil leaves 1 – cup (or Thai holy basil paste)
Chopped onion – 2 tbsp
Chopped garlic – 1 tsp
Fish sauce – 2 tbsp
Vinegar – 1 tsp
Oyster sauce – 1 tbsp
Sugar – 1 tsp
Salt
Chopped red chilli
Fresh lemon leaves (chopped)
White oil

Recipe:

At first we need a basil based spice mix. I prepared this dish with Thai holy basil paste. If you do not have the paste, take half of the basil leaves, chopped garlic and chillies in a blender and blend it very well.
Now take a bowl and put the basil mix or Thai holy basil paste and add 1 tbsp fish sauce, oyster sauce, vinegar and sugar. Mix it and keep aside with a lid.
Then mix the chicken with 1tbsp fish sauce and put it in a blender and blend it for 5 seconds or less, because we do not need smashed chicken, we just need small pieces of  chicken. Refrigerate it for 15 minutes.
Now heat oil in a pan and put the chopped onion, garlic and half of basil mix and fry till golden. Then add the chicken and cook it. When it changes its colour, add remaining basil mix and stir well. When you see the chicken is fully cooked, add chopped fresh lemon leaves and mix it.
Serve hot with steamed rice.
